Although it is a summer out there, time to time warming soup is just in time for dinner. 
As now garden is full of real treasures, like pumpkin's for example, I decided to cook soup from these fresh ingredients. 

1 kg pumpkin (peeled, seeded, chopped)
500 ml water
200 ml cream (10-25%)
Pinch of cumin
pinch of Himalaya salt
1 tsp of Asafoetida
1 tsp of Ghee butter

Fresh herbs and bread to serve.

Blend avocado, lime juice, sugar, double cream and pour in a bowl and place in the freezer. 
Mix every 10-15 minutes to make texture smooth with no ice crystals. 

 2 mashed avocados
200 ml cream
1/2 cup lime juice
100 gr brown sugar

Boil water, add carrots, when almost ready add broccoli, add spices (asafoetida, salt, haridra, and other by your choice). Mix everything and add cream. 
When served sprinkle with some pumpkin oil or fresh herbs (parsleyl, dill, etc.)

Boil water with berry juice, sugar and spices, when boiled, start to add manna by mixing constantly until the mixture is ready. After a few minutes use mixer to get it fluffy, leave it to cool. 

100 ml cream
manna- depending
sugar- 100 gr
water- 1 L
Spices- cardamom, cinnamon, nutmeg

2 cups berries- various berries of your choice (blackcurrant, red and white currants, gooseberries, etc.)
1 cup apple
3 tbsp sago
100 gr gur (cane sugar)
1 tsp tvak (cinnamon)
1/2 tsp ginger

Cut apples in pieces, add berries in a kettle, add sugar and spices, heat all ingredients, add some hot water and cook till apples are ready, add sago (soaked), bring to boil for 3-4 minutes. 
*before cooking soak sago and leave for 12 hours

When ready, serve with whipped cream or ice cream.

This is perfect for hot summer day like in these days in summer.
You will need these ingredients:

1 sheet of lav ash (egg less)
grated cucumber, radish, salad leaves, and other salads of your choice.
pinch of salt and garam masala
Mix everything together and roll in lav ash.
Leave for 30 min and serve up to your needs.

Heat large pan with ghee and spices (haridra, churna nr2, garam masala), etc. then add rinsed rice, nuts and fruits. Add pinch of salt. Pour on 2/3 water and cook for about 10-15 minutes, till ready.

As rice is the most favourite grain for many vegetarians, so  this might be some new recipe for meal variations.

Heat large pan with ghee, then add spices (haridra, black mustard seeds, garam masala or churna Nr 2 or other favourite spices.
Add rinsed rice and diced potatoes, mix them with spices and add 2/3 water to boil. Add pinch of salt.
Cook for about 10-15 minutes.

100 ml sunflower oil
150 gr brown sugar
200 ml yogurt
300 gr flour
3 tsp. baking powder
200 ml milk
1/2 tsp. haridra (kurkuma)
1/2 tsp. tvak (cinnamon)
pinch of vanilla

Mix oil with yogurt, sugar and vanilla. In another bowl sift flour with baking powder, tvak and haridra, mix everything together. 
Bake in 190* for about 20-25 minutes. Let biscuit to coll before making the layers. 
Cut in pieces and shape you need. 

There are many versions you can choose from which to use:

Raspberry cream

200 gr cottage cheese
100 ml cream
50 gr brown sugar
50 gr raspberry or any other berries of your choice
1/2 tsp tvak
1/2 tsp ela- cardamom
*almond or coconut crumbs may be added

Mix cottage cheese with cream and sugar, whip everything together. add spices and berries (and nuts). 

Oat flake cookies with nuts and fruits (Ayurvedic)

1 cup of oat flakes
1 cup wheat flour
1/2 cup brown sugar
2 tbsp mixed seeds
2 tbsp baking powder
100 gr butter
2/3 cup nuts and dried fruits
1/2 cup milk
1 tsp haridra- (kurkuma)
1 tsp garam masala

Start with mixing up the sugar and butter, then add another ingredients. Mix well until the dough is not sticking to the fingers. Make cookies and bake for about 20 minutes until light brown. 
* note that if cookie is thicker, softer it will be when ready. 

Homemade Ice Cream (Veg.)

Homemade Ice Cream

To make this cooling delicious treat you will need following things:

200 ml Cream  (25% up)
Blended berries (seasonal)- about 300 gr
Pinch of cardamom (ground)
Pinch of cinnamon
100 gr brown sugar

Whip the cream and add berries and mix well. 
Place in freezer and mix in every 10-15 minutes. When chilled it can be served with fresh berries or fruits.
