Chocolate muffins with caramel sauce (Vegetarian)

Today's sunshine inspired me to make these breakfast treats... Mmm... 

1 cup flour
1/2 cup butter
1 cup milk
2 tsp vanilla extract
1 cup sugar (brown sugar can be used as well)
1 tsp cinnamon
1/2 cardamom
1 tsp salt
1/3 cup cocoa powder
1 tsp baking soda

Mix all dry ingredients (flour, soda, sugar, cocoa powder, cardamom & cinnamon in large bowl, add all another ingredients, mix well. 

Take muffin forms, pour mixture in each and bake for about 20 minutes in 200*. 
When ready, sprinkle some caramel sauce on top.

Clementine pie with almonds and crumbs (Ayurvedic)

200 gr sweet cream butter
200-300 gr brown sugar
300 gr flour + 100 gr whole wheat flour
400 ml milk
15 pieces clementines
1 tsp. garam masala
1 tsp. nutmeg
4 tsp. baking powder

Dough crumbs: 
100 gr flour
100 gr sugar
60 gr butter (room t*)
1 tsp tvak (cinnamon)

Mix all ingredients until the dough turn to sandy crumbs. 

Preparation: 
Mix butter with sugar. in another bowl place flour, baking powder, spices and add 1 st mixture, pour in the milk. Place clementines (oranges and rhubarb can also be used) in the rows or up to your imagination, pour on the crumbs and almond flakes. 
Bake for about 30 minutes in 180*. 

 

Apricot-Nut pie (Vegetarian)

This is gorgeous dessert or take away snack for special days. :)

For dough:

500 gr flour
200 gr brown sugar
350 ml buttermilk (tirkultura or paninas)
200 ml milk
100 gr cashew nuts (almond or hazelnuts can also be used)
100 gr apricot (soaked)
200 gr raisins (soaked)
1 tsp nutmeg
1 lemon and orange peel
100 gr butter (melted)
1 tsp cinnamon
2 tsp baking powder
pinch of vanilla
1 tsp chilli or ginger 

Bring apricots and raisins to soak in hot water. Meanwhile mix flour with dry ingredients, add melted butter, mix well. Bake in 200* for about 25-30 min. 

Topping:

250 ml sour cream
4 tbsp brown sugar
1 tsp cardamom
* carob powder can also be used

When pie is ready and still hot, pour on this mixture and sprinkle with nut pieces or pistachio nuts like I did.



Oat flake cookies with nuts and fruits (Ayurvedic)


1 cup of oat flakes
1 cup wheat flour
1/2 cup brown sugar
2 tbsp mixed seeds
2 tbsp baking powder
100 gr butter
2/3 cup nuts and dried fruits
1/2 cup milk
1 tsp haridra- (kurkuma)
1 tsp garam masala

Start with mixing up the sugar and butter, then add another ingredients. Mix well until the dough is not sticking to the fingers. Make cookies and bake for about 20 minutes until light brown. 
* note that if cookie is thicker, softer it will be when ready. 


Raisin & walnut pie (Vegetarian)

For dough: makes about 1 kg (so you can now use just 1/2 of it and the other half place in the fridge for few days to make another baked goods using the same dough)

600 gr flour
3 tbsp brown sugar + (for sprinkling the dough)
2 tsp baking powder
1 tsp nutmeg
150 g butter + (for brushing the dough with it)
250 gr sour cream + (200 gr for cream mixture)
cinnamon




Cinnamon buns (Ayurvedic)

I always wanted to try these famous buns and now the right moment finally came. No regrets for waiting so long by the way :)

For dough: makes about 1 kg (so you can now use just 1/2 of it and the other half place in the fridge for few days to make another baked goods using the same dough)

600 gr flour
3 tbsp brown sugar + (for sprinkling the dough)
2 tsp baking powder
1 tsp nutmeg
150 g butter + (for brushing the dough with it)
250 gr sour cream + (200 gr for cream mixture)
cinnamon
maple (actually these ones are made with agave syrup which was quite good as well). 

+ you can also add some walnuts and raisins

Process: 

Mix flour with baking powder, sugar and nutmeg. Melt butter and mix it with sour cream till texture is foamy. Then add these 2 parts together and mash by hands till dough gets light, soft and airy. Let it rest for few minutes.
Cream: 
Meanwhile mix sour cream with brown sugar and cerob powder)- you will need this for later. 
Then roll it on kitchen surface and brush with butter and sprinkle well with cinnamon and brown sugar. (to get these buns softer I would recommend to brush with cream.  When you are done with stuffing, roll the dough well and but in 3-4 cm wide pieces. place on baking tray and try to widen the edges a bit (so syrup and cream covers the bun), then pour with syrup. 
Bake in 200* for about 20 min. When ready pour cream on the top and let these beauties cool down a bit.  Enjoooy! :)



Carob powder & egg-less biscuit bites (Ayurvedic)

So far everyone who has enjoyed this dessert is just amazed about it's unique taste :)

200 g butter
1 cup carob powder (natural chocolate substitute)
3 tbsp Gur (cane sugar)
100 g biscuits
50 g various raisins, marmelade without gelatin, dried pineapple or any other dried fruit in small cubes
1/2 tsp ela (cardamon)
1/2 tsp. tvak (cinnamon)
vanilla

Bring butter to melt, add sugar, cerob powder, dried fruits. Meanwhile crumble biscuits in pieces (not too small), mix everything together. Pour in container and place in freezer for 30 min, then keep in fridge.

Baked cottage cheese with goji berries and raisins (Ayurvedic)

400 g cottage cheese
5 tbsp manna grain
1 shredded banana
1 shredded apple
100 g various dry fruits, raisins, berries (before rinsed and steeped with hot water)
5 tbsp brown sugar
1 tsp ela (cardamom)
1 tsp tvak (cinnamon)
1 tsp turmeric
2 tbsp lemon zest

Mix everything together and bake for 25 min in 200*. Easy and delicious :)


Banana snack rolled in homemade dough (Ayurvedic)

This dish is perfect for breakfast as it takes just few minutes to make this warm delicious snack.
Homemade dough:
600 gr flour
200 unsalted butter (not ghe)
2 tsp baking powder
200 gr brown sugar
300 gr sour cream

Roll the dough, place banana in the middle and pour on some cinnamon, cardamon, and brown sugar. Bake in 190 * for about 20 min
