Red Plum cake (Vegetarian)

This seasonal dessert may be changed during the seasons, so you may try other versions with other ingredients.

For dough:

400 gr rye flour (wheat, rice, corn, etc.  flour can also be used, but only when mixed)
200 gr butter (melted)
200 gr brown sugar
1 tsp. tvak- cinnamon
1 tsp. ela- cardamom

8 plums (cut in half)
sprinkle with brown sugar and cinnamon


Berry cake with cream and date syrup (Vegetarian)

This was a gift for my dear day on father's day. I guess it was a good choice :)

So to make this delicious treat you should follow these instructions below:
This cake contains 3 layers (base, cream and topping). 

Base layer:
300 gr flour
100 gr cane sugar
2 tsp baking powder
1 tsp nutmeg
100 gr butter
250 gr sour cream
! Mix flour with sugar, spices, cream and melted butter, mix well and cook for about 25 min. While this part is cooling, start making the cream. 

Cream:
300 gr double cream (25%)
300 gr cane sugar
150 gr water
1 tsp tvak (cinnamon)
1 tsp ela (cardamom)
+ 1 tsp ginger powder can also be added
In kettle add water with sugar, and add double cream. Cook for some while, till it gets harder, then add spices. When ready leave to cool down. Pour this cream over the base layer, so it could soak a little. 

Decoration:
Pour on fresh berries like raspberries and blueberries. 
Sprinkle with date syrup and some grated dark chocolate. Enjoy! :)


Blueberry-Chocolate cake with marzipan (Vegetarian)


This is perfect cake for chocolate lovers and those who just love cakes. :D

For dough:
200 gr wheat flour
50 gr carob powder
50 ml hot water
1 tbsp lemon juice
150 ml milk
100 gr butter
150 gr brown sugar
1,5 tbsp. baking powder
1 tsp tvak- cinnamon
pinch of salt

Add hot water to carob powder and mix well till melted. In another bowl pour milk and add lemon juice till it leavens the milk, place aside. Mic butter with sugar and whip if possible. I another bowl mix flour and baking powder, spices and add all ingredients together, then add some vanilla. Bake in 180* for about 15-20 minutes. 

Coll it well, otherwise the cream can melt. When ready cut in needed shape or size and follow this order: Layer, cream, marzipan  (here you can also spread some jam- for example cranberries are great with chocolate), then another layer, cream, marzipan ans o on. 

Cream: 
200 gr silken tofu
100 gr dark chocolate
Mix both ingredients together and place in fridge to get firm. 

Baked biscuit layers with cottage cheese cream sprinkled with pistachio nuts (Ayurvedic)

100 ml sunflower oil
150 gr brown sugar
200 ml yogurt
300 gr flour
3 tsp. baking powder
200 ml milk
1/2 tsp. haridra (kurkuma)
1/2 tsp. tvak (cinnamon)
pinch of vanilla

Mix oil with yogurt, sugar and vanilla. In another bowl sift flour with baking powder, tvak and haridra, mix everything together. 
Bake in 190* for about 20-25 minutes. Let biscuit to coll before making the layers. 
Cut in pieces and shape you need. 

 Cream: 
There are many versions you can choose from which to use:

Raspberry cream

200 gr cottage cheese
100 ml cream
50 gr brown sugar
50 gr raspberry or any other berries of your choice
1/2 tsp tvak
1/2 tsp ela- cardamom
*almond or coconut crumbs may be added

Mix cottage cheese with cream and sugar, whip everything together. add spices and berries (and nuts). 

 

Easter cake (Vegetarian)
